Omelet with apples Instructions
The manuscript was published under the title "In Memory’s Kitchen: A Legacy from the Women in Terezín." The German recipes were translated rather literally into English to preserve the idiomatic characteristics. The measuring unit "decagram" is Austrian – 1 decagram is 10 grams, about 1/3 ounce.
"3/8 liter milk, 25 decagrams flour, 2 egg yolks, 1 spoon sugar, salt, 2 decagrams yeast, mix well. Then stir in 2 egg whites [stiffly beaten to] snow. Let stand covered in a warm place. Peel and grate apples on a grater to mix in [the batter]. Now pour batter with a ladle into seething fat, fry omelets. Fold and sprinkle generously with sugar and cinnamon."
